iTunes makes it very easy to backup your entire library. Go to File - Library - Back up to Disc. Once the window opens you will have the option of backing up your entire libary OR just items that have been added or changed since your last backup.
How to Get Music off your iPod
Please note: This is not a normal operation. This is usually used if you have synched your iPod in one place and can no longer access that library, ie Hard drive failure, etc. There is a chance if you don't do it properly you could lose a lot of music.
